Cachupa is a traditional dish from Cape Verde, made with corn, beans, and various meats. There are many variations of this recipe, but here is a delicious and fairly simple version to prepare.
Ingredients
- 250g of corn
- 250g of beans (red, black, or pinto)
- 500g of pork
- 500g of beef
- 2 Portuguese sausages (chouriço)
- 2 onions
- 2 cloves of garlic
- 1 green bell pepper
- 1 red bell pepper
- 2 tomatoes
- 1 pinch of salt
- 1 pinch of pepper
- 2 tablespoons of olive oil
Preparation
- Soak the corn and beans in cold water for 12 hours.
- Drain the corn and beans and place them in a large pot with cold water. Bring to a boil, then reduce the heat and let simmer for 1 hour.
- Meanwhile, cut the meats into pieces and the sausages into slices. Chop the onions, garlic, bell peppers, and tomatoes.
- Heat the olive oil in a pan and sauté the onions, garlic, bell peppers, and tomatoes for about 5 minutes.
- Add the pieces of meat and the sausage slices to the pan and brown them on all sides.
- Transfer the contents of the pan into the pot with the corn and beans. Season with salt and pepper to taste.
- Let it simmer for an additional hour, until the meats are tender and the flavors are well blended.
- Serve the Cachupa hot with rice or bread.
