- STEP 1: In a mixing bowl, dissolve 15 g of fresh baker’s yeast in 6 cl of lukewarm milk.
- STEP 2: Add 50 g of type 45 flour and 1 tablespoon of powdered sugar, mix until you obtain a smooth dough.
- STEP 3: Then incorporate 1 egg yolk and mix again until homogeneous.
- STEP 4: Let the dough rest for about 30 minutes in a warm place, until it doubles in volume.
- STEP 5: In another mixing bowl, mix 200 g of flour, 100 g of sugar, and 2 whole eggs.
- STEP 6: After resting, add the previously prepared dough mixture to this mixture and knead for 10 minutes.
- STEP 7: Add 40 g of butter at room temperature and continue kneading until the dough is smooth and elastic.
- STEP 8: Form a ball, place it in a buttered mixing bowl, and cover it for a rest period of 1 hour.
- STEP 9: Preheat the oven to 170°C and butter your pandoro mold before using it.
- STEP 10: Once the dough has rested, pour it into the mold and bake for 10 minutes at 170°C.
- STEP 11: Then, reduce the temperature to 160°C and continue baking for about 50 minutes.
- STEP 12: Let the pandoro cool before unmolding and generously dust it with powdered sugar.
