Recipe for easy periwinkles to prepare at home

Le bigorneau est un fruit de mer abondant et très intéressant. Il est règlementé, comme la plupart des fruits de mer, alors verifier les decrets prefectoraux de votre région. En Finistère 29 le ramassage se fait toute l’année avec 500 bigorneau par jour et par personne maximum. Conseil cuisson, laissez dmles dégorger une nuit dans de l’eau douce salé. Puis mettez les dans une marmite, couvrez les d’eau à hauteur et mettez un fond de verre de vinaigre d’alcool et 30g de sel par litre d’eau. Portez à ebullition. Dès l’ébullition atteinte coupez le feu et laisser les bigorneaux dans l’eau 5-10 min tel quel. Egouttez les et c’est prêt.
