STEP 1: Open a vanilla bean in half and extract the vanilla seeds with a knife.

STEP 2: In a saucepan, mix the liquid cream with the vanilla seeds and the open bean.

STEP 3: Heat the cream over low heat to infuse the flavors of the vanilla without boiling.

STEP 4: In a heat-resistant bowl, break the white chocolate into small pieces to facilitate melting.

STEP 5: Once the cream is hot, remove the vanilla bean and then pour it in three times over the white chocolate.

STEP 6: Gently mix until you obtain a smooth and homogeneous ganache. If needed, heat slightly to help with the melting.

STEP 7: Let the ganache rest at room temperature to thicken before use.

Preparing a vanilla ganache does not require any special pastry skills. With just a few ingredients like liquid cream and vanilla bean, you can create a base for many sweet preparations. Don’t forget to properly scrape the seeds from the pod to extract the flavor. The double boiler method ensures a smooth and creamy texture, essential for your creations.
